Hmm.... Mine are most certainly rosy (well, half of them), but I'd not call this "intense". Otoh, I don't think their color changed since they arrived about 3 weeks ago.
On food: regular brine shrimp is taken, I don't think baby shrimp is needed. They also dig in the sand, I guess looking for the leftover food.
On chasing: it is a bit down now, probably just regular erratic loach behavior in a new environment. But they are still incredibly active. Very small and very active fish probably implies very short lifespan.

Food:
The appear to eat everything.
White mosquito larvae is appreciated and since these worms are thinner/smaller, i think they are totally safe.
Crashed flakes.
Right now, four of them are fighting an algae wafer (thin edge, so they can bite).
Chasing:
Down, but most of it still comes from the pinkies.
