Mine have from time to time up rooted new small plants. But anything with an established root system has been safe.
I've never had a problem with then eating plants.

Never had a problem, but I have all Cryptocoryne, which are fairly sturdy.

They seem to be pretty much plant-safe, except for newly planted plants with nothing to really hold them down. Put a few pebbles around plants when you transplant them to hold them down until they root, there is less chance of them getting dug up. These Loaches are not great diggers, but once in a while they will go rooting through stuff.

I have had some of my kubs tear into grass like plants and nibble at cryps which end up killing the leaf
nothing like an eos which destroy a planted tank in about 6 weeks.
