my loaches have begun chewing up the plastic plants in their tank leading me to think that they need some green stuff. Can anyone tell me what are safe veggies for them?

Most veggies should be just fine. You could try broccoli, spinnach, kale, peas (remove the skin), cucumber, and also some fruits like watermelon. For green veggies blanch them for a minute or two in boling water and then weight them down so they'll sink. There's some good information on feeding in this article:

Mine seem to like the Zucchini (Courgette) / Cucumber combo that i put down for the plecos, and will fight them off (even the big guy) to get at it. I usually just peel them, wash after peeling, and wedge on the back of a spoon so the veggies sink. I haven't tried any other veggies tho, except pumpkin and they weren't fans of that.

I forgot about peas, when I fed them they were pushed around like beach balls by my fish. You have to crush them for small fish as they are tough as coconuts for little fish .My severums would bite them, spit them out then re eat them enjoying that immensly
