Amazon sword plant- As each leaf dies, remove it near the base. Some species grow a new plant on a stem like a spider plant. Put a pebble near the end of this stem so the baby plant is next to the substrate. When it roots, cut it off and replant the baby plant.
-Anubias berter- Cut off old leaves as they die. If you want to divide this plant cut is so the old and the new parts both have leaves.
-java fern- Same as Anubias.
-Sagittaria subulata- "Trimming" is really stopping the spread in the tank. Cut vertically through the roots where you want it to stop growing and remove any that are spreading too far. These can be replanted.

Kelly,
There is a great website called
http://www.plantedtank.net that you might find helpful if you're just getting started with plants. Be careful, planted tanks are addicting!
